Preliminary Study of the Anthracene Detection in Vegetable Oils by 1H-NMR Spectroscopy

Abstract
The harms of the polycyclic aromatic hydrocarbons (PAHs)in vegetable oils draws more and more attention. In this paper, the additional PAHs - anthracene were added into the certain pure vegetable oil, and then the vegetable oil containing anthracene was diluted in serials by vegetable oil. The 400M liquid NMR and trans - ATB probes were used to detect the 1H NMR of the vegetable oil containing anthracene. The results show that the anthracene could be detected clearly and the detection limit reach 10g/kg, it will meet national standards of GB 2716 - 2005.
